Ingredients:

  • 2 tbsp natural almond or peanut butter (with any oil sitting on top mixed in) *
  • 1 tbsp 100% carob sauce or maple syrup
  • 1 tbsp cacao nibs

To serve:

  • Apple slices *

Instructions:

  1. Gather ingredients (while you’re sending your family out of the house).
  2. Mix together in a small bowl (tasting as many times as necessary).
  3. Cut apple. Locate the nearest apple, cut into wedges, generously smear with chocolate spread and devour (congratulating yourself on making a nourishing snack).
  4. Enjoy! If there’s not an apple to be found, you have my permission to eat it straight off the spoon ?
Serve with:

As a dip, it’s perfect for serving with slices of sturdy fruit, such as apples, pears, and persimmons. This dip can also be gently warmed, thinned with a tablespoon of coconut oil and drizzled over chopped fresh fruit (try banana, stone fruit, citrus or berries), stewed fruit or yoghurt.

Substitutions:

Use pepita or sunflower butter for a nut-free option. To really sweeten the deal, substitute cacao crunch nibs (cacao nibs that have been coated in coconut sugar).

Storage suggestions:

Store any leftovers (who am I kidding?) in an airtight container in the fridge for up to 4 days.

Peri’s Tip:

I love using carob sauce for this recipe because it amplifies the chocolatey-ness of the dip. I buy it from our local health food shop, but you may also find it in some bigger, independent supermarkets.

Peri's Recipe Reflections:

You know those days when you just want a little something sweet? Something that’s chocolatey, satisfying, and wholesome, but still knock-your-socks off delicious?

Something you don’t have to bake or wait to chill before you can devour it? Something you don’t have to make a family-sized portion of. Something you can make quietly – unobserved – that’s a little indulgence just for you?

Tell me I’m not the only one who wishes for this? ?

Just last week I had a ‘sweet-seeking’ day.

I grabbed a few ingredients I love, and hey presto, this easy-peasy nutty chocolate spread was born!

This delightfully simple 3-ingredient recipe has all that you could wish for.

In case you need convincing, I’m going to carefully point out all it’s good points:

  • It features only real food (that likely resides in most pantry’s).
  • You can be indulging in it’s goodness in under 2 minutes (even without your toddler knowing!).
  • The caramel flavour is reminiscent of dates, but without any of the soaking or chopping!
  • It has a delicious chocolate crunch courtesy of the cacao nibs.

There you have it. 4 perfectly valid reasons you should leave your computer (or put your phone down) and make it ?

I hope you love it as much as I do.

Peri x
